Chicken & Vegetable Soup with Nutritional Yeast

Tender chicken, carrots, celery, onion and fragrant herbs simmer together in a savory broth, while Bluebonnet Nutritional Yeast Flakes add an extra layer of rich, savory flavor. Simple, satisfying and made in one pot, this cozy soup is perfect for chilly days, easy lunches or a nourishing weeknight dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 2-3 tablespoons Bluebonnet Nutritional Yeast Flakes
  • Fresh herbs for garnish, optional

Preparation Instructions

  1. Sauté the aromatics. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3-4 minutes, until softened. Add the garlic and cook for another 30 seconds, stirring frequently.
  2. Add the vegetables. Stir in the carrots and celery and cook for another 3-5 minutes, allowing the vegetables to begin softening.
  3. Add the broth and seasonings. Pour in the chicken broth and add the thyme, rosemary, salt and black pepper. Stir to combine and bring the soup to a gentle boil.
  4. Simmer. Reduce the heat, cover and simmer for about 15-20 minutes, or until the vegetables are tender. Add the chicken. Stir in the cooked chicken and continue simmering for another 5-10 min, until the chicken is heated through and the flavors have come together.
  5. Finish with nutritional yeast. Stir in the Bluebonnet's Nutritional Yeast Flakes just before serving, mixing until evenly incorporated into the roth. Adjust the seasoning to taste.
  6. Serve. Lagle the warm soup into the bowls and garnish with fresh herbs or an additional sprinkle of Nutritional Yeast Flakes, if desired. Enjoy! 
Recipe Tip
For an even heartier soup, add cooked rice, quinoa or your favorite small pasta. If using pasta, cook it separately and add it to individual bowls to help keep leftovers from becoming too thick.
