Ingredients

For the chicken skewers

1½ lbs boneless, skinless chicken breast, cubed

2 tbsp Bluebonnet Brewer’s Yeast

2 tbsp olive oil 2 garlic cloves, minced

1 tbsp fresh lemon juice

1 tsp paprika

Salt and black pepper, to taste

Wooden or metal skewers

For the tzatziki sauce

1 cup plain Greek yogurt

1 medium cucumber, finely diced or grated

1 tbsp fresh lemon juice

1 garlic clove, minced

1 tsp Bluebonnet Brewer’s Yeast

Salt and black pepper, to taste

Fresh dill, optional

Cooking instructions

1. Marinate the chicken. Combine the cubed chicken, Brewer’s Yeast, olive oil, minced garlic, lemon juice, paprika, salt and pepper in a bowl. Mix until evenly coated and refrigerate for at least 15–30 minutes.

2. Prepare the skewers. Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water beforehand to prevent burning.

3. Grill the chicken. Preheat your grill to medium-high heat. Grill the skewers for approximately 10–15 minutes, turning occasionally, until golden brown and cooked through. The chicken should reach an internal temperature of 165°F.

4. Prepare the tzatziki. Place the finely chopped cucumber in a bowl. Add Greek yogurt, lemon juice, minced garlic, Brewer’s Yeast, salt and pepper. Stir until thoroughly combined. Add fresh dill, if desired.

5. Serve and enjoy! Arrange the grilled chicken skewers on a platter and serve with a generous helping of homemade tzatziki sauce. Pair with warm pita bread, rice or a fresh Mediterranean salad.

Recipe tip
Squeeze excess moisture from the cucumber before adding it to the yogurt for a thicker, creamier tzatziki. For extra flavor, refrigerate the sauce for 15–30 minutes before serving.
