Roasted Butternut Squash & Tomato Soup with Nutritional Yeast

Roasted butternut squash, juicy tomatoes, onion and garlic come together for a rich, naturally comforting fall soup, while Bluebonnet Non-Bitter Nutritional Yeast Flakes add a savory finishing touch. Blended until smooth and creamy, this simple soup is perfect for cool-weather lunches, weeknight dinners or an easy seasonal meal.

Ingredients

  • 4 cups butternut squash, peeled and cubed
  • 2 cups cherry or grape tomatoes
  • 1 medium onion, cut into chunks
  • 1 whole head garlic
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2-3 cups vegetable broth, plus more as needed
  • 2-3 tablespoons Bluebonnet Non-Bitter Nutritional Yeast Flakes
  • Fresh herbs for garnish, optional 

Preparation instructions 

  1. Prepare the vegetables. Preheat the oven to 400°F. Add the cubed butternut squash, tomatoes, onion and whole head of garlic to a roasting pan. Drizzle with olive oil and season with salt and black pepper.
  2. Roast until tender. Roast for approximately 30–35 minutes, or until the butternut squash is fork-tender, the tomatoes have softened and the vegetables are lightly caramelized.
  3. Transfer to a pot. Carefully squeeze the roasted garlic cloves from their skins and add them to a large pot along with the roasted squash, tomatoes and onion.
  4. Add the broth. Pour in 2 cups of vegetable broth and stir to combine. Bring to a gentle simmer over medium heat.
  5. Blend until creamy. Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, transfer the mixture in batches to a countertop blender. Add additional broth as needed to reach your preferred consistency.
  6. Add the Nutritional Yeast. Stir in Bluebonnet Non-Bitter Nutritional Yeast Flakes and simmer for another 5 minutes, allowing the flavors to come together. Taste and adjust the seasoning as needed.
  7. Serve. Ladle into bowls and finish with an optional sprinkle of Nutritional Yeast Flakes or fresh herbs. Serve warm and enjoy!
Recipe Tip
Roasting the vegetables before blending helps concentrate their natural flavors and gives the soup a deeper, richer taste. For a thicker soup, start with less broth and add more after blending until you reach your preferred consistency.
