Ingredients
For the chicken skewers
- 1½ lbs boneless, skinless chicken breast, cubed
- 2 tbsp Bluebonnet Brewer’s Yeast
- 2 tbsp olive oil 2 garlic cloves, minced
- 1 tbsp fresh lemon juice
- 1 tsp paprika
- Salt and black pepper, to taste
- Wooden or metal skewers
For the tzatziki sauce
- 1 cup plain Greek yogurt
- 1 medium cucumber, finely diced or grated
- 1 tbsp fresh lemon juice
- 1 garlic clove, minced
- 1 tsp Bluebonnet Brewer’s Yeast
- Salt and black pepper, to taste
- Fresh dill, optional
Cooking instructions
1. Marinate the chicken. Combine the cubed chicken, Brewer’s Yeast, olive oil, minced garlic, lemon juice, paprika, salt and pepper in a bowl. Mix until evenly coated and refrigerate for at least 15–30 minutes.
2. Prepare the skewers. Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water beforehand to prevent burning.
3. Grill the chicken. Preheat your grill to medium-high heat. Grill the skewers for approximately 10–15 minutes, turning occasionally, until golden brown and cooked through. The chicken should reach an internal temperature of 165°F.
4. Prepare the tzatziki. Place the finely chopped cucumber in a bowl. Add Greek yogurt, lemon juice, minced garlic, Brewer’s Yeast, salt and pepper. Stir until thoroughly combined. Add fresh dill, if desired.
5. Serve and enjoy! Arrange the grilled chicken skewers on a platter and serve with a generous helping of homemade tzatziki sauce. Pair with warm pita bread, rice or a fresh Mediterranean salad.
